When mom is home alone what will she eat????

What do I make when I know that the girls will be gone with their dad for a father daughter dance???  Slow Cooked Corned Beef!!!!  I know weird right…..well let’s start with a little story!  Every year for St. Pattys day my mom made corned beef- so i have ate ALOT of corned beef- I love it- but I HATE THE SMELLL of it cooking.  So when I make it I usually put it on the good old Traeger- but this year I was busy on St. Patty’s day and didn’t make it until later.  And I didn’t have time to babysit it on the Traeger because I was in and out all day.  So I tried a new recipe and let me tell you something………….IT DIDN’T SMELL BAD!!!!  I think its the apple juice!

None- when I made the Rueben I made my own sauerkraut- which really did stink- but was it AWESOME!!!  It would actually be very good on the Traeger- so next time that is what I will do!


Easy- really easy- put it in the crock pot and forget about it!


I did!!!!!  It was so good I froze the left overs for a later date!

So I bought some Sausage

I had bought sausage to make meatballs, but I didn’t want to make meatballs so I made this!  But of course I changed it a bit!

1  I did use a crockpot or whipped cream cheese- I used 1/2 a block of cream cheese.  I completely omitted the chicken broth because I wasn’t cooking my tortellini in the crock pot.

2.  I did 1 can of tomatoes and added some extra Italian seasoning.  I let that cook for about 10 minutes, added my cream cheese while I boiled my pasta (4 minutes and that was done!)

3.  The sauce gets thick- probably because I didn’t have as much liquid- so before I added the pasta I added half and half- just enough so it wasn’t to thick—–YUMMMMMMMMMMM!  Added pasta and sprinkled with cream cheese!


Easy!  Hadley helped- she “tested” it while it was cooking!

Did they clean their Plates?

Yes- Dennis said it was pretty filling and very rich- you don’t need tons!

I will keep it!  Next time I might even do it in the crock pot!

What to make on a Snowy day in……MARCH?

We live in Iowa- Northeast Iowa- its March 12th, and we are in a winter storm WARNING!  Oh dear!!!!  So let’s have some SOUP AND BREAD BOWLS!!!!  But I didn’t have any yeast……….so I made beer bread bowls!  If I knew how easy beer bread was to make from scratch I would have never spent all that money on Tastefully Simple beer bread mix!  I literally had it mixed up in 5 minutes!!!  Two recipes tonight- both have beer in them!

I actually baked these in my Corelle soup bowls- you can put them in the oven for temperatures up to 350 so I baked them from 30 minutes and perfection!


Very easy- mixed it up in 5 minutes.

In no time flat- they all loved it- Sunday night you know Austin is here and so was Gabe.  Hadley ate one before supper- she loved it!

Keep- not only is is easy, and good its very cheap and I always have all the ingredients on hand!!!!

I love soup- not always cheese soup- so I did change this a bit!!!  And it was good!

I didn’t put the jalapenos in it- there is no way Dennis would eat it!  I also added roasted potatoes.  While the veggies were simmering I diced the potatoes, then I tossed them in olive oil and salt and roasted them for 35 minutes or so until they were golden brown- stirring once.  (I also just fished out the veggies with a slotted spoon instead of straining.)

I added them to the soup after the cheese- just to warm them up and keep them perfect.


For me it was easy- for some it might be a little hard but the website will walk you through it if you don’t understand how to make a basic rue.

Seconds for everyone!  Really, really, really good.  I would love it with the spice!

Something Different

Ahhhh there’s an old name……..Allrecipes.  Before Pinterest that was my go to website for recipes.  I really liked it- but I like to be able to look at different things on Pinterest and there I can pin things from allrecipes in Pinterest.  I didn’t want chicken, or ground beef so I got out my tenderized sirloins aka cube steak or whatever you want to call it and made this.  I made parmesan noodles with it because I knew the girls would eat those if they didn’t like the meat and some asparagus just steamed with some butter.


Just used tenderized steaks instead of regular old steak.


Easy peesy!  Cutting things up is the hardest part!

Yep- all of us did, Dennis was gone so he doesn’t count. Meat was good, it wasn’t like the most amazing thing I have ever ate, and it didn’t look at all like the picture.  The girls didn’t ask for seconds, and I didn’t either.

I’ll keep it- I’m not a huge fan of steak with tomato sauce, it just isn’t something I really like, I feel like I’m cheating on steak- but it wasn’t bad.

Dennis wanted Bacon Wrapped Meatloaf

I love bacon wrapped meatloaf – love it- this recipe was a little different- it took hamburger and made it into “sushi”. Well I don’t have a sushi mat- I just used aluminum foil- and it was pretty easy.  I used really thick cut bacon from our hog last summer, thinner bacon might have been better- but still good.  I served it with hash browns and glazed carrots!  YUM!

LOTS!  I pretty much just used the technique!  I really used the Pioneer Woman’s bacon wrapped meatloaf recipe along with this one.  What I really love about the Pioneer Woman’s recipe is the soaked bread in milk or for me half and half.

Here is what you do- Soak bread (two-three slices) in some milk or half and half (just cover the bread), add an egg, dried onions ( 1/2 tbsp) Greek seasoning I used about a tablespoon ( I love the stuff and use it all the time), salt and pepper to taste.  Soak it until you can stir it and it breaks down- 3 minutes or so. If its really runny you can add some bread crumbs  Add your beef (one lb) and stir/mix with your hands.  I let it sit in the fridge for 15 minutes before I spread it on the bacon.

If you make more of a traditional meatloaf cook it for an hour at 375 degrees.  Let rest for 5-10 minutes before cutting or it will fall apart.


It was easy for me- maybe not a beginner- but not too hard.

Yep- everyone- its Sunday night so Austin was here- not sure he tasted it- it was gone before I took a bite!  Harper got seconds!  Hadley didn’t like the onions in it, but she still ate it.

The Girls Wanted Chicken

The girls wanted chicken, I wanted something easy.  So off to my pinboard!  I ran across this.  It’s not a pretty picture that was pinned- which being the visual eater I am I was surprised I pinned it, but the description said 4 ingredients (they description at the bottom of the pin is wrong- its not sour cream).  So I thought let’s try it!!!  I made some steamed veggies and mashed potato balls with it- another Pinterest recipe- but I’ll save that for another day!


I marinated the chicken in a little Italian Salad dressing for like an hour before I cooked it- other then that I didn’t do anything different!


0- Anyone can make this – I think Dennis could make this!

Yep- everyone- Hadley had seconds!!!  It was really moist and really quite good!  We all liked it- I think it would warm up well for left overs.

It’s a keeper- it would be something easy to make on a school night when I have 100 things to do!  To be honest I could delete it because its so easy, but I’ll keep it there to remind me to make it every once in a while!

Soups On!!!!

I was feeling like soup!  Hadley is sick- she hasn’t ate anything- Harper will eat what I put in from of her and Dennis is working- so I get to pick!!!  So its ZUPPA!!!!  I love this stuff from Olive Garden!  One good thing about living in Iowa is the meat its wonderful!  I know where my meat is coming from because we butcher hogs and steers that were grown 3 miles from our house.    There are lockers in every little town- our local one was in Bizzare Foods- they make the most amazing brats!  I also can get it MSG free and when you battle migraines like my niece and I do that is a great thing to be able to do.  Its is a large investment in the beginning but you end up paying like $3 per lb for everything- but when you butcher 1000 lbs!



  1.  I used regular sausage- not spicy – my family are wimps!
  2.  I didn’t have heavy whipping cream so 2% milk had to do- whole milk would have been better- but it is what it is.
  3. I didn’t put the Kale in the whole thing- my family won’t like it, but I do so I took enough kale for my bowl and added a little water, put it in the microwave for 45 secs- it was perfect!
  4. I didn’t use a slow cooker- did it on my stove top, it was quick- 30 minutes to make sure my potatoes were soft then made everything else- 45 minutes tops! But- fry your sausage in a different pan- my soup turned darker.


Easy- super easy- Hadley could do it!

EVERYONE!!!  YES!  They all loved it- but remember I’m the only one who had kale in mine!  It added a nice little flavor to it, but the green scared off the rest of the family.
